I promised to let you in on my favorite pizza dough recipe so here it is:
4 cups flour
1 1/2 teaspoons active dry yeast
1 1/2 teaspoons salt
1 1/2 cups ice-cold water
2 Tablespoons extra virgin olive oil
1. Mix the first 3 ingredients in your mixer. Measure water and add oil in with water, no need to mix. Gradually add water/oil in with the dry ingredients in a slow, steady stream while beating on low speed for 3 minutes. Beat at high speed for 5 minutes
2. Cover your dough with plastic wrap and place in a warm spot for 1 1/2 to 2 hours or until almost doubled in bulk and dough is springy to touch. Punch dough down.
3. Cut dough into 2 equal pieces. Roll each piece into a ball and stretch top of dough around the outside of ball. Pinch the edges together forming a smooth ball.
4. Place dough balls on a lightly greased baking sheet, sprinkle flour on top of dough and cover with a damp towel. Let the dough rest in a cool place for 1 hour.
This dough comes out perfect every single time. It makes 2 large pizzas, or about 8 calazones.
